In Traditional Fermentation live biological agents such as bacteria, fungi or yeasts break down organic nutrients to form new organic compounds. Beer brewing and winemaking are examples of traditional fermentation. In Precision Fermentation microbial hosts are cultivated to synthesize more complex organic compounds such as proteins, enzymes, vitamins, pigments, fats and more. This requires much more accurate and repeatable control of the fermentation process temperature, pressure and duration than that required for traditional fermentation.
Precision fermentation is used for all aspects of the synthetic food production process including the manufacture of synthetic food meats, seafood, tofu, vegan dairy and all other products manufactured using plant-based protein.
